Set across two floors of 3 Henrietta Street, Pivot Bar & Bistro is a modern British restaurant overlooking Covent Garden’s iconic Piazza. Designed as a concept that reinvents itself every month, Pivot celebrates seasonality and a relaxed bistro atmosphere. The result is a dining experience that feels familiar yet continually fresh.

Pivot Covent Garden was designed as a distinctly British bistro and bar: contemporary in its expression and rooted in the local rituals of the former market heritage that defines the neighbourhood.

The menu draws on the best of seasonal British produce, shaped by the transient energy of Covent Garden street culture and its long-standing memory of fresh ingredients and the daily bustle of the theatre district.

Curated by chef Mark Greenaway, the food and beverage offer celebrates the breadth and quality of produce from across the British Isles. Signature dishes amplify familiar classics, from North Sea fish and chips to Aberdeen Angus burgers and a generous Sunday sharing roast, anchoring the experience in comfort, familiarity and occasion.

The Brief

The brief was to create a contemporary British bistro that could evolve in line with a fully changing monthly menu.

The space needed to feel warm and inviting while supporting an immersive culinary experience that placed the kitchen and chefs at the centre. Flexibility and authenticity were key drivers from the outset.

Developing the Concept

Pivot was conceived as a restaurant shaped by the seasons. With menus changing in their entirety each month, the concept required a strong yet adaptable foundation.

Curated by Mark Greenaway, the food philosophy focuses on using the best ingredients available and reimagining British classics through a refined but approachable lens.

This seasonal mindset informed every aspect of the concept, ensuring the experience feels thoughtful and rooted in quality.

Design Drivers

 

The design direction takes its cues from modern British culture, drawing on references from art, music and heritage to create a layered and characterful interior identity.

Set within an 18th-century Grade II listed townhouse, the project embraces the architectural integrity of the building, using a palette of rich, warm tones to heighten its historic features while introducing a distinctly contemporary sensibility.

On the ground floor, the atmosphere is intentionally stripped back — an interpretation of the traditional British pub, recast through a more refined and culturally current lens. In contrast, but using the same materiality, the dining room and open kitchen offer a calmer, more understated sense of ‘grandness’ and arrival, with views out to the Covent Garden Piazza providing a natural framed focal point and reinforcing the venue’s connection to place.

A striking open kitchen anchors the space, with a chef’s counter offering guests a front-row seat to the action. This creates a sense of energy and authenticity while strengthening the relationship between diners and chefs.

The first-floor dining room overlooks the Piazza, blending contemporary finishes with the warmth of a classic British bistro. The design balances elegance with comfort, creating a space that suits all occasions.

The brand identity juxtaposes the interior design language — simple and elegant, using a modern stencilled typeface that emphasises craft, paired with an elevated, transitory market-style graphic language.

This tension between heritage reference and contemporary restraint creates a visual identity that feels both rooted and current.

Communicating the Brand

Pivot’s brand is expressed through its ever-changing menu, welcoming ambience and visible craftsmanship. The open kitchen, seasonal storytelling and relaxed service all reinforce the restaurant’s core values of honesty, quality and British craft.

Furniture and art were selected to create an eclectic but highly considered composition, balancing traditional Arts and Crafts references with modern detailing. Traditional materials sit alongside contemporary pieces, championing modern British craftsmanship and creating a visual language that feels timeless yet grounded in tradition.

Every detail works together to create a sense of British craft, delivering a memorable dining experience.
