Baron is a contemporary Lebanese dining concept that brings together neighbourhood hospitality and international culinary ambition. Founded in the Armenian Mar Mikhael district of Beirut, it reinterprets the idea of a local restaurant through a refined yet informal dining experience shaped by chefs with backgrounds in some of the world’s most respected kitchens.
What began as a humble neighbourhood eatery has grown into one of the Middle East’s most recognised dining destinations while remaining firmly rooted in its Beirut identity and street-level authenticity. Developed alongside Chef Tommy as part of his expansion into the Middle East, the concept successfully introduced a modern Lebanese dining experience to a wider regional audience while staying true to its original character and cultural roots.
The Brief
The ambition for Baron was to create a dining space that could exist comfortably between two worlds. It needed to function as a neighbourhood restaurant deeply embedded in the social fabric of Beirut while also standing as a globally relevant dining destination.
TGP International was appointed to translate this dual identity into a physical and experiential concept through interior design and brand representation. This work extended to Baron’s international presence at Expo 2020 Dubai.
The brief required a space that felt organic, unpretentious and chef driven while still delivering an experience that was sophisticated, simple and deeply connected to place.
Concept Development
The concept for Baron was developed as a journey through the Eastern Mediterranean culinary landscape. Inspiration was drawn from Beirut’s farmers’ markets, fishing communities in Tripoli and agricultural fields in the Bekaa Valley as well as tavernas in Greece and countryside restaurants across the Levant.
The name Baron, derived from Armenian slang meaning man of the street, anchors the identity in accessibility and community. It reflects a restaurant that belongs to its city rather than standing apart from it.
At its core the concept celebrates contrast. It combines high level culinary craft with a relaxed social environment that feels familiar and grounded.
Design Drivers

The interior design approach focused on expressing authenticity through restraint and clarity. A central driver was chef led hospitality where a prominent counter and bar bring guests directly into the rhythm of the kitchen and remove separation between dining room and culinary process.
Materiality was kept honest and tactile to reflect the raw texture of Beirut while maintaining architectural refinement. The result is a space that feels elevated without becoming formal.
The design also focused on informal sophistication where precision sits alongside imperfection in a way that feels natural rather than styled. Cultural influence from the Levant and wider Eastern Mediterranean is expressed subtly through atmosphere and spatial flow rather than overt decoration.
The overall layout encourages social interaction between guests and chefs creating a sense of shared experience that mirrors the energy of Beirut’s streets.
Marketing and Positioning
Baron was positioned as a narrative led brand rather than a traditional restaurant concept. Its identity is built around storytelling rooted in Beirut’s culinary culture combined with the credibility of its chef team and their international experience.
This approach allowed Baron to extend beyond its local origins and establish itself on a wider regional and global stage. Its presence at Expo 2020 further strengthened this positioning by presenting Beirut’s dining culture to an international audience in a curated and designed environment.
Outcome
Since opening, Baron has achieved significant recognition across the region. It was awarded Best Restaurant in Lebanon in 2022 and 2023 by The World’s 50 Best Restaurants. It was also ranked number twelve in the MENA’s 50 Best Restaurants list in 2022, number sixteen in 2023 and 2024, and number forty-two in 2025.
The restaurant continues to be recognised as one of the leading dining destinations in the Middle East while maintaining its original neighbourhood spirit and identity. The success of the project generated extensive international press for Chef Tommy and led to the development of a new concept together called Assembly, which opened in Dubai to replace the original Baron site. Assembly later expanded into Harrods and Al Mamlaka, creating a strong platform for continued collaboration and enabling the development of additional hospitality brands together across the region.
Baron demonstrates how a concept grounded in local culture can evolve into a globally recognised destination through considered design, clear storytelling, and a consistent sense of place.
